Cheddar Baked Chicken & Potatoes

You know you made a good dinner when your husband licks the plate and then goes back for seconds.



3 potatoes, sliced
1 - 1 1/2 pounds of chicken breasts (bone out)
Butter spray
1 can (10 1/2 oz) chedddar cheese condensed soup
2 tbs chopped pimiento
1/2 tsp chili powder
1 1/2 tsp dried parsley flakes

Directions:
Preheat oven to 400 degrees.
Spray bottom of pan with Pam (non stick spray). Slice potatoes and arrange at bottom of the pan. Spray potatoes with approximately 15 sprays of butter spray. Bake potatoes in oven for 10 minutes uncovered. Arrange chicken in the pan. In a small bowl, combine cheese soup, pimiento, and chili powder. Pour mixture over chicken then sprinkle with parsley. Bake at 365 degrees for approx. 25 minutes. You might have to cover it with foil for the last 10 minutes +/-.

Serve with broccoli or your favorite green veggie.

Quick egg-wich



This is:
1 slice whole wheat bread = 90 cals
1 1/2 slices of fat free cheese = 45 cals (i normally use just one slice but i wanted to make the picture look pretty with the cheese covering the whole slice of bread)
1 hard boiled egg = 76 calories
butter spray on bread = 0 calories
= 211 calorie breakfast

Its an easy \ healthy \ yummy breakfast. I boil like 4-6 eggs at a time (at night) (so they are ready for salads, breakfast, etc.). So in the morning I toast a piece of bread, spray some butter spray, put cheese on and slice the hard boiled egg in two and put it on.

Incredible Cheesy Turkey Meatloaf



Incredible Cheesy Turkey Meatloaf
I HALVED THIS RECIPE FOR CHRIS & I.... AND WE HAD SOME LEFT OVERS.
We loved it! It's not all greasy and heavy like meatloaf with ground beef. Yummy!

INGREDIENTS
2 pounds ground turkey
1 cup milk
1 cup Italian seasoned bread crumbs
2 eggs
1 teaspoon salt (seasoned salt)
1/4 teaspoon pepper
3/4 pound Colby cheese, cut into 1/2-inch cubes
1/2 cup ketchup (optional) yes use it!


I added :
about 1/4 cup of diced or grated onions
dash of Tobasco
a little bit of garlic

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.
Bake 50 minutes - 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C). Then top with a little bit of ketchup if desired.

Chicken & Spinach Bake




Ingredients:
8 to 12 ounces fresh chopped or baby spinach, cleaned
salt and pepper
1/4 cup chicken broth
4 chicken breast halves, boneless, pounded slightly to even thickness
Creole or Cajun seasoning blend or other blend
salt and pepper
1 large tomato, diced
3 green onions, with green, sliced
1/4 Cup mozzarella cheese

Preparation:
Heat oven to 350°. Lightly grease a 9x13-inch baking dish or spray with cooking spray. Put spinach in the baking dish, sprinkle with salt and pepper. Add chicken broth. Sprinkle chicken with seasoning blend, salt, and pepper; arrange over the spinach. Sprinkle with the diced tomato and green onion. Cover the baking dish with foil. Bake for 25 minutes. Uncover and bake for 10 to 12 minutes longer, or until chicken is cooked through. Spread mozzarella cheese over the chicken and cook till cheese is melted, approximately 3-4 minutes.
Serves 4.

By no means is there anything healthy about this recipe, but it is yummy and gerat for parties. You can use yummy things to dip in this .. apples, graham crackers, chocolate.....

Ingredients:

1 package (8 ounces) cream cheese, at room temperature
1 cup powdered sugar
3/4 cup creamy or chunky peanut butter (not all-natural)
3 tablespoons packed dark brown sugar
1 1/2 cups (9 ounces) NESTLÉ® TOLL HOUSE® SWIRLED™ Milk Chocolate & Peanut Butter Morsels
Graham cracker sticks and/or apple slices


Directions:
BEAT cream cheese, powdered sugar, peanut butter and brown sugar in large mixer bowl until blended. Spoon onto a large piece of plastic wrap; bring up all four corners and twist tightly (should form a ball shape).

FREEZE for 1 hour 30 minutes or until firm enough to keep its shape. Place morsels in flat dish. Remove plastic wrap from ball and roll ball into morsels to completely cover (you may find it necessary to press morsels into ball).

PLACE ball on serving dish; cover and freeze for 2 hours or until almost firm. (Can be made ahead. If frozen overnight, thaw at room temperature for 20 to 30 minutes before serving.) Serve with graham cracker sticks and apple slices for dipping or spreading.
